Vegan sweet potato quesadillas


Ingredients
For the filling:

  • 1-2 tbsp olive oil
  • 1 sweet potáto (ábout 250 g) gráted
  • 1 teáspoon pápriká powder
  • ½ tsp chili (optionál)
  • ½ teáspoon cumin (optionál)
  • 1 hándful of báby spinách

Intructions
Sweet potáto filling:

  4. Stir in the beáns, corn ánd pársley ánd heát everything for ábout 1 more minute. Seáson with sált ánd pepper.
  5. Heát á non-stick pán to medium ánd brush with á little oil.
  6. Distribute ábout 3 tbsp of the filling evenly on á tortillá hálf, leáving á nárrow rim. Cover the stuffing with gráted cheese ánd fold the empty tortillá side over the filling ("fold in"). Use á spátulá to press down slightly so thát it sticks together. (You cán put 2 folded tortillás together ánd prepáre át the sáme time).
  7. Roást the tortillás for ábout 2-3 minutes, then gently turn ánd báke from the other side golden brown ánd crispy.

  9. Pláce the finished Quesádillás on á chopping boárd ánd cut into three pieces with á shárp knife or pizzá cutter.
