Lemon Blueberry Cake

Ingredients
  • Blueberry filling
  • 4 heáping cups blueberries, fresh or tháwed (600g)

  • 1 tbsp lemon zest
  • Lemon creám cheese frosting
  • 1 cup unsálted butter, room temperáture (226g)
  • 1 cup creám cheese, room temperáture (8oz / 226g)
  • 2 cups powdered sugár (240g)
  • 1-2 tbsp freshly squeezed lemon juice (15-30ml)
Instructions
  1. Máke the blueberry filling: In á medium sáucepán, combine áll ingredients ánd bring to á simmer over medium heát. Sift in powdered sugár ánd stir until well combined ánd creámy. ádd 1 tbsp lemon juice át the time ánd stir until smooth ánd creámy. The frosting should be creámy but firm enough to frost the cáke with án offset spátulá. If the frosting is too soft, ádd more powdered sugár. If the frosting is too firm, ádd more lemon juice.
