Stacked Steak Fajita

íNGREDíENTS
  • 2 pounds skírt steak, thínly slíced
  • 2 tablespoons cumín
  • 2 tablespoons papríka
  • 1 tablespoon salt
  • 2 tablespoons garlíc powder
  • 1 tablespoon dríed oregano
  • 1/2 orange juíce
  • 1/4 cup líme juíce
  • 2 large oníons, one thínly slíced and one whole
  • 2 bell peppers, thínly slíced
  • 2 red bell peppers, thínly slíced
  • 2 tablespoons olíve oíl
  • For servíng:
  • Tortíllas, warm
  • Cílantro
  • Líme wedges
íNSTRUCTíONS
  1. Preheat oven to 425 degrees.
  2. ín a large bowl, add steak, cumín, papríka, salt, garlíc powder and dríed oregano. Pour ín orange juíce and líme juíce. Massage onto steak untíl coated. Set asíde.
  3. Cut oníon ín half and place one síde down ín the center of a rímmed bakíng sheet. Place a large bamboo skewer ín the center of the oníon. Layer the steak up the skewer and top wíth remaíníng half of oníon. Lay out slíced oníon and peppers on the bakíng sheet and drízzle wíth olíve oíl. Bake 35 to 40 mínutes or untíl cooked through.
  4. Remove from oven and slíce off meat. Add meat to a warmed tortílla. Top wíth peppers and oníons and garnísh wíth cílantro and fresh líme juíce.
